As the name implies, Krakowska hails from Poland's old royal capital of Kraków. This sausage has always been one of the top sellers in Poland. It is made from choice cuts of lean pork, seasoned with pepper, allspice, coriander and garlic, packed into large casings an cooked in aromatic hot smoke. The result is a delicious, lean and meaty sausage fit for a king. It is an excellent cold cut for sandwiches, dressed any way you like. Krakowska is usually considered a cold meat, but some people like it fried. Krakowska goes by many similar names for example Krakauer Sausage or Krajana.

Krakowska can be considered already cooked and may be eaten in slices on sandwiches or on cold cut platters. If you enjoy ham and eggs, you'll be crazy about Krakowska.

Thawing: the refrigerator is the slowest but safest method and will result in the least amount of moisture loss in comparison to the other methods. The temperature of the refrigerator should be maintained at 35 to 40 degrees. Leave the meat wrapped and placed on a platter or a tray to catch the drippings as it thaws or unwrap and loosely cover with plastic or foil. Approximate Refrigerator Thawing Time: 4 to 5 hours per pound
