Improted Polish Sauerkraut and Mushroom

Sauerkraut is made by a process of pickling called fermentation. Fully-cured sauerkraut keeps for several months in an airtight container stored at or below 59 °F. Neither refrigeration nor pasteurization is required, although these treatments prolong storage life.
 

Polish Sausage and Sauerkraut 1 lb of Polish fresh sausage 2 jars of Polish sauerkraut with mushroom 1/2 lb of smoked bacon 1 med. onion, diced Water Slice sausage (2 inch) pieces, set aside. Fry bacon. Add onions to bacon, frying until clear. Combine sauerkraut, bacon, onions all together in a slow cooker or roaster. Slow simmer 40 minutes. Add Sausage and continiue simmering for 20 minutes. Add water if necessary. Keeps very well in a slow cooker on low.
