Pierniczki are gingerbread biscuits, very well known across the whole of Eastern Europe especially due the fact that they have always been given traditionally as gifts. In Poland, gingerbread is known as Piernik. The tradition of making gingerbread biscuits dates back to 13th Century in a town called Torun. The location meant that there was plenty of wheat and rye flour as well as locally sourced honey. Spices were brought in from India via Germany or through the Baltic port of Gdansk. They can take many forms, covered in chocolate or sugar glaze.  Pierniczki Alpejskie are the most famous Polish cookies in the world and they come with 3 great fillings: plum, apple and strawberry.
