In Poland, head cheese is referred to as salceson, a name derived from saucisson, the French word for a type of sausage. Head cheese has the same number of fans as opponents. It is associated with very exquisite cuisine of the Polish Republic but it is really worth to try and appreciate. Let yourself be tempted. Its uniqueness is noticeable when cut, when you can see pieces of different meats. Black head cheese contains delicate pieces of meat, spices like garlic, pepper, cumin and marjoram and little of pork blood like in Kiszka. Their superb authentic taste will please any head cheese connoisseur. It is usually eaten cold or at room temperature as a luncheon meat. Serve on Rye Bread with traditional Polish mustard.

For best results, allow meat to fully thaw in your refrigerator.
