


Marzipan Roulade
The Marzipan cake is a complex cake often enjoyed during the holidays in Poland. A marzipan roll is often made during the Easter season. Made upon the base of the marzipan confection - a sweet made of sugar, honey and almond extract, this long roulade cake is a sponge cake filled with a mouse made of maraschino cherries and topped with a thick marzipan coat. Beautifully decorated on top with frosting pieces made to represent Easter bunnies, it is a delicious and classic Polish sweet perfect for the Easter holiday!
The cake is about 12” long and provides 8 large servings or can be sliced into 16 thinner pieces.
