The Marzipan cake is a complex cake often enjoyed during the holidays in Poland. A marzipan roll is often made during the Easter season. Made upon the base of the marzipan confection - a sweet made of sugar, honey and almond extract, this long roulade cake is a sponge cake filled with a mouse made of maraschino cherries and topped with a thick marzipan coat.
