Sour Soup in Bottle
Sour Soup in a Jar is a made soured rye with water, spices and sourdough. This is the base for the old fashioned Polish soup, Zurek. Zurek is served with boiled fresh Polish sausage or pieces of smoked sausage and typically finished with spears of hard boiled egg. Zurek is traditionally eaten during Easter, but is also popular during other parts of the year. (A little known Polish secret is that Zurek is excellent to help cure a night of drinking.)
It is specific to Poland, where it is known as żur or żurek, and a variant is know as barszcz biały (white barszcz) made with wheat flour instead of rye.
